Cooking in the Kitchen | Healthy Appetite for Better Living

by msim621 on April 13, 2011

Today was a cooking in the kitchen moment.  I decided to get down to it and cook everything from scratch; but not only that I used all new recipes.  Which could make for some great new tastes; hopefully liked by all!

I started by trying and making a quadruple batch of "Apple Wolfberry Snack Bars".  And right off the bat I changed the recipe based on what I had at home and made it my own.  Let me just say that these are the "BEST" healthy snack bars that I have made;  filling, a great option for better health, weight management, and eating healthier.

"It's so QUICK and EASY to make, and a healthy snack for ANYTIME of Day."

Ingredients:

  • 3/4 cup Oatmeal (I used quick oats)
  • 1/4 cup Wheat Germ
  • 6 Egg Whites (Bought egg whites from the store as to not waste yoke of egg)
  • 2 scoops of vanilla protein powder
  • 2 Tablespoons unsweetened apple sauce
  • 1 tsp cinnamon & nutmeg
  • 1/2 tsp vanilla extract
  • 2 apples, diced
  • 3/4 cup NingXia Wolfberries
  • 1/2 cup almonds (chopped finely)

Directions:

  1. In a blender, mix all ingredients-except apples, wolfberries, and nuts.  Blend until thick and pour into mixing bowl.
  2. Add apples, wolfberries, and nuts.
  3. Pour mixture into a baking dish and cook at 350 degrees until cooked (about 30 minutes)
  4. Cut into square bars and keep in convenient places for a healthy snack daily.
